- pork tenderloin (approx. 1 lb/500 g), trimmed
- 1 tbsp
- honey Dijon dressing
- 15 mL
- 1 tsp
- vegetable oil
- 5 mL
- 1/4 cup
- apple juice
- 60 mL
- 1
- red apple, cored and cut into thin wedges
- 1 clove
- garlic, minced
- 1 tbsp
- fresh thyme
- 15 mL

- 1/8-in. (3 mm) thick slices Double Cream Brie Log
Directions
Step 1
Mix together salt, paprika and pepper. Slice pork into 8 equal pieces. Flatten any thicker pieces by gently pressing them with your palm. Season both sides of pork with paprika mixture.
Step 2
Heat honey Dijon dressing and oil in a large non-stick skillet over medium heat. Add pork and cook until golden, about 2 min. per side. Add apple juice, apple wedges, garlic and thyme, then stir. Cover tightly and simmer gently, turning pork once, until pork is cooked through, about 3 min. per side.
Step 3
Place Brie overtop pork and divide among 4 plates. For a thicker sauce, boil liquid in skillet for 30 to 60 sec. and then spoon over pork and apples. Serve with fresh asparagus and orzo, if desired.
