Directions
Step 1
Into a large non-reactive bowl, zest 1 lime and add its juice. Peel the mango and shave the fruit into "ribbons" using the wide blade of a box grater, mandolin or vegetable peeler into the lime mixture in the bowl. Toss to coat. Stir in green onion, chili, cilantro, olive oil, 1/4 tsp (1 mL) salt, sugar, and pepper. Sprinkle on peanuts, if using. Set aside.
Step 2
Season pork chops with 1/4 tsp (1 mL) salt and pepper to taste. Place pork chops on barbecue preheated to medium. Grill about 4 min. per side, or until a meat thermometer reads 160°F (71°C) in thickest part of chop.
Step 3
Halve remaining 2 limes crosswise. Place on barbecue cut-side down, grill until edges are slightly charred, about 4 min.
Step 4
Serve pork chops with mango slaw and grilled limes.
