Ingredients
- 1 cup
- semi-sweet chocolate chips and chunks, divided
- 250 mL
- 1 pkg
- cream cheese, at room temperature
- 250 g
- 1/2 cup
- icing sugar
- 125 mL
- 1/2 cup
- graham wafer crumbs
- 125 mL
- 1 tbsp
- vanilla extract
- 15 mL
- pinch of salt
- medium desiccated sweetened coconut, sprinkles and chocolate cookie crumbs for coating
Directions
Step 1
Melt 1/2 cup (125 mL) chocolate chips in a double boiler. Meanwhile, using an electric mixer, beat the cream cheese until smooth. Add icing sugar, graham crumbs, vanilla and salt, and blend well. Mix in the melted chocolate and the remaining chocolate chips. Cool mixture in the freezer until firm, about 15 min.
Step 2
Hand-roll into balls the size of large marbles. Toss balls in coconut, sprinkles or cookie crumbs until well coated. Return to freezer and chill thoroughly, about 15 min., or until ready to serve or wrap up.
