- medium corn cobs, shucked
- 1 1/2 cups
- coarsely grated Compliments Monterey Jack cheese, divided

- garlic clove, finely grated

- fresh strained lime juice

- ancho chili powder

- 1/4 cup
- mayonnaise
- 60 mL
- 1/4 cup
- full-fat sour cream
- 60 mL
- Torn cilantro sprigs, for serving
- Sliced jalapeños, for serving
- Tortilla Chips, for serving
- Lime wedges, for serving
Directions
Step 1
Preheat clean, oiled grill to high heat.
Step 2
Place corn on grill. Cook, with lid closed, turning often, 8 to 12 min or until corn is charred and cooked through. Remove to a plate to cool, 20 min.
Step 3
Meanwhile, position the oven rack in the centre position. Preheat oven to 350°F (177 °C).
Step 4
Toss 1 cup (250 mL) Monterey Jack with flour in a medium bowl until coated. Set aside.
Step 5
Whisk cream cheese with garlic, lime juice and chili powder in a large bowl, until smooth. Add mayonnaise and sour cream, mixing until combined. Fold in Monterey Jack, using a spatula, until combined.
Step 6
Carefully remove corn kernels from cob, using a sharp knife. You should have about 1 3/4 cups (425 mL). Reserve 1/4 cup (60 mL) for sprinkling overtop.
Step 7
Fold corn into cheese mixture until fully combined. Scrape into a 10-in. (25-cm) cast iron skillet or a 7.5 cup (1.75 L) volume baking dish, smoothing to fill pan. Sprinkle with reserved kernels, then remaining 1/2 cup (125 mL) Monterey Jack.
Step 8
Bake 20 to 25 min. on centre rack, or until edges are bubbly and cheese is melted. Remove from oven to cool 5 min. Sprinkle with cilantro and jalapeños. Serve immediately with tortillas chips and lime wedges.
