How to keep a crust stuck onto fish:
- In small bowl, fork-beat 1 egg yolk, 1 tbsp (15 mL) Dijon mustard, generous pinch each salt and pepper.
- Brush onto tops of skinless fish fillets. Dip coated side into sesame seeds.
- Pan-fry seeded side in olive oil in skillet until golden. Flip over fish to cook underside

How to keep a crust stuck onto fish:
- Drizzle olive oil onto greased or foil-lined baking sheet. Roll salmon portions in oil to coat all sides.
- In bowl, mix 1 tsp (5 mL) brown sugar, 1 tsp (5 mL) chili powder, 1/2 tsp (2 mL) ground cumin, 1/2 tsp (2 mL) dried thyme, 1/4 tsp (1 mL) onion salt. Sprinkle tops of salmon with spice mix.
- In skillet, drizzle a few drops olive oil. Grill lime halves until lightly charred. Squeeze over salmon to serve.
