Directions
Step 1
Put a large sauce pan on medium high. Heat and add oil. When oil is hot, add leeks and cook until soft then add the garlic and cook for 30 seconds. before adding the mushrooms. Cook mushrooms until they are soft then add the broth and water, bring to a boil and simmer for 50 min. then add the quinoa and fresh herbs and cook for 10 more min.
Step 2
Add pepper and serve hot.
