Ingredients

- Compliments Cream Cheese, softened
- 250 g
- ½ cup
- crumbled creamy blue cheese
- 120 mL
- zest of 1 lemon
- 1 tbsp
- lemon juice
- 15 mL
- 1 tbsp
- olive brine
- 15 mL
- 3 tbsp
- Compliments Extra-Virgin Olive Oil, divided
- 45 mL
- 2 tbsp
- gin or vermouth (optional)
- 30 mL
- ½ tsp
- Compliments Onion Powder
- 2.5 mL
- ¼ tsp
- freshly ground black pepper
- 1.25 mL
- For martini olives:
- ½ cup
- quartered or roughly chopped green olives
- 120 mL
- 3 tbsp
- dry gin or vermouth
- 45 mL
Directions
Step 1
In a food processor, whirl cream cheese, blue cheese, lemon zest, lemon juice, olive brine, 1 tbsp of the olive oil, gin (if using), onion powder, and pepper until smooth.
Step 2
Transfer to bowl; cover and refrigerate until chilled, at least 4 hours or up to overnight.
Step 3
For gin marinated olives, combine olives and gin and cover at least 4 hours or up to overnight to allow the flavours to mellow.
Step 4
Spread dip in a shallow bowl and make a well in the centre; drain marinated olives and spoon in centre. Drizzle the remaining 2 tbsp olive oil over the dip and serve with crunchy vegetable sticks, lettuce cups, pretzels and crostini.
