- flank steak or skirt steak, cut into ¼-inch thick strips

- Compliments Soy Sauce, divided

- Shaoxing wine or dry sherry, divided
- 2 tsp
- Compliments Cornstarch

- oyster sauce

- granulated sugar

- broccoli, florets separated and stems thinly sliced (5 cups)
- 1 tsp
- toasted Compliments Sesame Seeds
Directions
Step 1
In a bowl, combine beef, 1 tbsp of the soy sauce, 1 tbsp of the Shaoxing wine and toss to coat. Refrigerate and marinate for at least 20 minutes.
Step 2
In a separate bowl, stir together the remaining 3 tbsp soy sauce with cornstarch until combined. Stir in the remaining 2 tbsp Shaoxing wine, chicken stock, oyster sauce, sugar and sesame oil.
Step 3
Finely chop the green onions, separating the white and green parts. In a small bowl, combine garlic, ginger and white parts of the green onion.
Step 4
Heat a wok or large skillet over high heat. Add 1 tbsp of the oil until shimmering. Add half of the beef and cook, without moving to sear, about 1 minute. Cook, stirring until slightly pink, about 45 seconds. Transfer to a plate. Repeat with 1 tbsp of oil and the remaining beef. Wipe out wok.
Step 5
Add 1 tbsp of the oil until shimmering; add half the broccoli and cook, stirring until tender-crisp, about 1 minute. Repeat with 1 tbsp oil. Return the beef and add the garlic mixture with white parts of green onion; cook, stirring for 30 seconds. Stir the soy sauce mixture and add to the wok. Cook, stirring until sauce is slightly thickened, about 1 minute.
Step 6
Transfer to a platter and sprinkle with sesame seeds.
